Almond Butter and Date Energy Bites
- 3/4 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup chia seeds
- 6-8 medjool dates - pitted
- 2 teaspoons maple syrup or honey
- 1/4 cup shredded coconut - unsweetened
- 1/2 cup Lily’s chocolate chips
- Pulse all the ingredients together in a food processor until they start to ball up, about 30 seconds.
- Pour the mixture out onto a baking sheet and start rolling into bite sized balls. Store in a plastic bag and keep them on the counter or the refrigerator!
