Teri Turner of No Crumbs Left is the mastermind for these marinated onions! She loves them and seems to put them on everything. And now I know why. Marinating them takes the raw edge off of the onions while also making them applicable to lots of different foods.
They would be great on a sandwich, a salad, a Mediterranean bowl or even eggs in the morning! They take a dish from simple to complete and it is so, so, so easy!
My recipe just has one more ingredient than Teri’s recipe and that is salt! Ha! Are you surprised?
Enjoy this simple yet essential, topping, condiment or as Teri says, “Magic Elixirs!”
- 1 red onion-thinly sliced
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 teaspoons salt
- 2 teaspoons dried oregano
- Simply mix together the olive oil, red wine vinegar, salt and oregano together. Pour over the sliced red onions I a small bowl. Allow them to marinate for at least 2 hours before putting them on literally ANYTHING! I paired them with my falafel bowl last night for dinner!
- They keep for 4-5 days in the refrigerator!
